I opted for buckwheat soba noodles in place of spaghetti noodles, threw in some greens for color, kept the Parmesan (now freshly grated), and served the noodles along side Parmesan-crusted tofu

There's actually no cream in the spinach, it uses milk instead. The bacon adds wonderful flavor, but you can easily skip it if you are so inclined.
